Artichoke Gratinata

As-Salaam ‘Alaikum Beloved Asiatic Black Queens and Kings!

I saw this recipe on my shopping bag and it sounds really delicious. If you have never tried artichoke hearts they are sumptuous. I have only had them in salads but this is a dish that features them.

I Googled the recipe and found some pictures. It looks sorta like a casserole/stuffing because of the bread crumbs. Anytime you hear gratin know that there are bread crumbs. It’s probably French for grated.

INGREDIENTS

3 T olive oil

1 garlic clove minced

1 lb. frozen artichoke hearts thawed

2 T chopped fresh parsley leaves

3/4 t salt

1/3 t freshly ground black pepper

1/8 t red pepper flakes

1/2 c chicken broth

1/4 c Marsala wine

2 T butter

1/3 c plain bread crumbs

1/3 c grated Parmesan

DIRECTIONS

Warm the olive oil in a heavy bottom skillet over medium high heat

Add the garlic and cook for one minute

Add the artichoke hearts, parsley, salt, pepper and red pepper flakes

Cook until artichoke hearts start to brown at the edges, about three minutes

Add the chicken broth and wine and simmer for three minutes.

Transfer the artichoke mixture to a 2 quart baking dish

Bake uncovered in a moderate oven until top becomes crisp about ten minutes

Note: The last step is not in the original recipe but seems to make sense.
