Quiche, Fritattas, And “Eggstables”

As-Salaamu ‘Alaikum Beloved and Beautiful Sisters,

I LOVE EGGS! They are probably the easiest and most versatile food on our planet. Our Beloved Messenger (Peace Be Upon Him) taught us in HOW TO EAT TO LIVE, BOOK TWO (Page 97) that “Eggs are all right to eat…But do not try to eat all that the hens lay at one time. (smile).”

He taught us that, “No meat is good for you,” so we should be vegetarians or pescatarians. However, going vegan is exceeding the limits. As I already mentioned, The Messenger of Allah (PBUH) taught us eggs are all right. He also repeatedly taught us that Milk Is Our First Food and it is One of The Best Foods We Can Eat.

He also taught us that we can eat butter and cheese. So, since The Honorable Elijah Muhammad (May the Peace and the Blessings of Allah Forever Be Upon Him) was Taught By THE ALL-KNOWING, ALL-WISE, ALL-POWERFUL LORD OF THE WORLDS, I do not agree with anyone (who was probably taught by the devil Caucasians, who were put here to cut short our lives) on becoming vegan.

Many of you Muslims, are claiming that the food is worse now than it was when Our Beloved Messenger (PBUH) was alive. But my dear Sisters, do you not know that Our Beloved Messenger (PBUH) Was Taught the Knowledge, Wisdom and Understanding that is going to carry us into the Hereafter??? Do you think that he did not know all that is to come?? He taught us that the devil tampers with everything, so do the best you can and eat one meal a day.

He also taught us to eat simple foods and if you follow The Divine Supreme Wisdom Teachings of HOW TO EAT TO LIVE, you will find that there are only a few foods that you can eat to live. However, you can vary your preparation of these foods and eat happily and healthily.

Our diets should consist primarily of milk, bread and beans. We can also eat fruits and vegetables. Our Beloved Messenger (PBUH) also taught us that we can “eat some sweets, but do not make a meal of sweets and eat them every day.” He taught us to “leave those old, white potatoes alone” and that if we want to live a long time, we should not eat spaghetti and macaroni. However, he said we can eat rice, but since it is a very starchy food, we should only eat it in moderation. He also gave specific instructions on how to cook rice.

But this is about eggs. I have found several different ways to jazz up my vegetable dishes just by adding eggs. Quiche is delicious, but requires a little more work if you make your crust from scratch. So, I usually just make something called a frittata. It is like a casserole but just with eggs, vegetables and cheese. And I don’t even make that too often. It’s easier to just make what my son and I call “Eggstables.” I generally, just roast some vegetables (it doesn’t matter what kind) like I normally do, with garlic, onion, butter and seasonings. But instead of just eating them, I scramble three to five eggs with parmesan cheese (I like fresh cheese for grating myself because it doesn’t have the preservatives) and add a little milk and scramble them all together. Eggs always come out lighter and fluffier when you add milk. I season it the way I like it and it tastes really good, not to mention how super simple it is to make. Hakim eats it pretty much every day with Bean Soup and Wheat Toast with Butter and Cream Cheese.

Frittatas are the egg dish that I absolutely love and have eaten every day for weeks. It is very similar to the Eggstables, but instead of frying the eggs with the vegetables on the stove top, you cook the vegetables and scramble the eggs separately in a bowl with freshly grated Parmesan cheese (you can use any cheese but Parmesan is my fave), a little cream or milk and seasonings then add the eggs to the roasted vegetables and bake for about twenty more minutes. And OMG! So Good! Another little addition I like to add are capers! They take the frittata over the top!

According to How To Eat To Live:

“YOUR BEST vegetables are: cauliflower, cabbages (not the green cabbages)… Some other vegetables we eat are as follows: Brussels sprouts, asparagus, eggplant, okra, squash and rhubarb.”
