The Nation of Islam is almost as well-known for its bean cuisine as it is known for its Black Supremacy Teachings. This is because the small white navy bean, according to the Teachings of Allah to Our Beloved Messenger (PBUH), is the BEST FOOD we can eat.

SUPREME BEAN PIE
INGREDIENTS
2 c Navy Beans
1 Stick Butter (1/2 cup) ONE MORE STICK OF BUTTER
2 T Whole-Wheat Flour
4 Eggs
1 t Nutmeg
2 c Honey
1 12 oz. can Evaporated Milk
1 t Cinnamon
2 T Vanilla Extract
(Pie crust recipe is below)
DIRECTIONS
Cook beans until soft. (I like to add a little butter to the beans when I cook them.)
Preheat oven to 350°F.
In large bowl, mix honey and warm beans.
Blend thoroughly and return to large bowl.
Blend butter, eggs, flour, nutmeg, milk and cinnamon.
Pour into bean/honey mixture.
Add Vanilla.
Mix well.
Pour into pie shells.
Bake about 45-50 minutes until golden brown.
Then spread soft stick of butter on top and return to the oven until browned.
(I have never tried this but I have spread butter on baked goods and can attest to the fact it will turn brown and buttery delicious. TRY IT! And let me know the results! 🙂 Not sure how long it takes to brown…. Five?
PIE CRUST
INGREDIENTS
2 c whole-wheat flour
3/4 c butter
5 T cold water
Mix flour and butter using a pastry blender, two knives or a fork until all flour is just blended to form pea-sized chunks.
Sprinkle in water, one tablespoon at a time.
Toss lightly with fork and form dough into a ball.
Divide dough into two parts.
Press between hands to form (2) 5-6- inch patties.
On a lightly floured surface, use a rolling pin to roll one patty into a circle the size of an upside down pie pan.
Gingerly roll the crust around the rolling pin and unroll it into the pie pan.
Repeat with the other patty.

My son doesn’t really care for the crust, so he came up with the brilliant idea of making it with no crust. I had never heard of a pie with no crust. But I looked it up on the Internet and I saw recipes for Pumpkin pie with no crust. And knowing that before Our Nation started making Bean Pie, they used to eat Pumpkin pies, I was sure it would work. So, if you are not that particular toward crust, this pie is also very, very good without it. Just butter your pie pan real good before pouring the mix into it and bake it just like you would with a crust. The pie in the picture is crustless.
I met a Brother selling bean pie on Crenshaw one day. He had one left. I bought it and why was it the best bean pie I had ever had in my life. I knew the secret was his crust. I had never had a bean pie with a crust like that and it was so good. Years later I realized it had a graham cracker crust. I have never made a bean pie with a graham cracker crust but that is also an option they are delicious!
